You don’t know what to do with old overripe bananas?
You can try these delicious, healthy pancakes. It takes just 10 minutes to prepare everything and another 10 minutes to cook them. And they are not just easy, they're also flourless, gluten-free and sugar-free.
All the sweetness flavour comes from the ripe bananas and that special touch that boosts the flavor from the cinnamon.
I have to say, they are a must try!

INGREDIENTS:
-2 bananas
-1 cup oats (used gluten-free oats)
-2 eggs
-2 tablespoons yogurt (optional)
-1 tsp baking soda
-vanilla or cinnamon (optional)
-coconut oil for frying (or butter)
METHOD:
1. First, you need a food processor or a blender and a bowl to mix everything together until smooth.
2. Second, heat the butter/coconut oil in a large non-stick pan and pour the batter into small, palm-sized pancakes. Reduce the heat a little bit, they might burn fast and once bubbles come up, flip using a large spatula and cook until golden brown.
NOTES!
You can serve these delicious pancakes with some fresh fruits, honey, peanut or almond butter, maple syrup or any topping you enjoy! I made my topping with berries, yogurt and a little bit of honey, blended together in a food processor and tossed on the pancakes. It was delicious!
Add more oats, if needed, and ideally will be to let the batter sit for 10-15 minutes before cooking, to let the oats get hydrated. This will make the pancakes lighter.
