Apple Turnovers

Homemade apple turnovers are a delightful way to make use of extra apples and infuse your home with the enticing aroma of winter spices. Crafting these turnovers is easy with ready-made pastry, fresh apples, and common pantry staples that are probably already on hand in your kitchen!

What you need

- 1 sheet shortcrust pastry (375g)
- 2 apples peeled, cored and chopped
- 1 tsp cinnamon
- 1/2 tsp ground mixed spice
- 1 tbsp brown sugar
- 1 tsp cornflour
- 1/2 lemon juice
- 100ml water
- 1/2 tsp vanilla extract
What you do
1. Preheat the oven to 200°C and line a large baking sheet with parchment. Remove the shortcrust pastry from freezer and thaw according to the package instructions (15 mins), while making the apple filling.
2. Peel, core and chop the apples, as small as possible, add in the sugar, cinnamon, ground mix, lemon juice and the vanilla extract and combine.
3. In a medium pot, heat the water and 1 teaspoon of cornflour, if you don't have it, you can replace the water and use only 2 tablespoons of butter, add diced apples and cook for 5 minutes, stirring occasionally or until apples are soft and caramelised. Remove from the heat and let them cool before putting them into the pastry.
4. Roll out the pastry on the parchment and cut into 6 rectangles. Add about 2 tablespoons of apple filling into each rectangle and fold over leaving an edge which you crimp with a fork. Take a knife and make 2-3 slits on top of each turnover.
5. Move them on the baking sheet, brush each pastry with a beaten egg and bake for 20-25 minutes, until they turn golden brown.
