Banana Waffles

Updated: Nov 4

Enjoy nutritious, simple, and tasty waffles! Ideal for a leisurely Sunday morning or any day of the week! Made without refined sugar, these waffles are sweetened with banana and honey, ready in under 30 minutes, and incredibly delightful.

Servings: ~10 waffles

Prep time: 5 min

Cook time: 20

Total time: 25 min

What you need:

  • 1 ripe mashed banana

  • 1 tbsp nut butter

  • 2 tbsp honey

  • 1 tsp vanilla extract or any kind you like

  • 50ml oat milk (or any preferred milk)

  • 2 eggs

  • 80g flour of choice

  • 1 tsp baking powder

  • coconut oil to spray

  • For topping: honey, banana, walnuts, blueberries, raspberries, strawberry jam

What you do:

  1. In a large bowl, mash 1 ripe banana with a fork and add in 1 tablespoon of nut butter, 3 tablespoons of honey, 50ml of milk of your choice, 2 eggs and 1 teaspoon of vanilla extract.

  2. Mix all the ingredients together and then add the flour with 1 teaspoon of baking powder. Be careful to not over mix the flour or the waffles will be chewy.

  3. Spray the waffle maker with coconut oil and add a large spoonful of the mix in the centre of the waffle maker. Let it cook for about 4-5 minutes (check on your waffle maker instructions) until golden brown.

  4. Repeat with the rest of the mix until finished. Serve with a drizzle of honey or nut butter and top it with some sliced bananas, blueberries or raspberries. Or you can top it with your favourite toppings and fruits.
