What you need:
1 ripe mashed banana
1 tbsp nut butter
2 tbsp honey
1 tsp vanilla extract or any kind you like
50ml oat milk (or any preferred milk)
2 eggs
80g flour of choice
1 tsp baking powder
coconut oil to spray
For topping: honey, banana, walnuts, blueberries, raspberries, strawberry jam
What you do:
In a large bowl, mash 1 ripe banana with a fork and add in 1 tablespoon of nut butter, 3 tablespoons of honey, 50ml of milk of your choice, 2 eggs and 1 teaspoon of vanilla extract.
Mix all the ingredients together and then add the flour with 1 teaspoon of baking powder. Be careful to not over mix the flour or the waffles will be chewy.
Spray the waffle maker with coconut oil and add a large spoonful of the mix in the centre of the waffle maker. Let it cook for about 4-5 minutes (check on your waffle maker instructions) until golden brown.
Repeat with the rest of the mix until finished. Serve with a drizzle of honey or nut butter and top it with some sliced bananas, blueberries or raspberries. Or you can top it with your favourite toppings and fruits.
