Biscuit salami is one of those desserts that take me back to my childhood. My mom always used to make it. But now I changed the recipe a little bit and turned it into a healthy snack.
This one it’s easy and quick, no bake and no refined sugar. It takes up to 10 minutes to make it, the waiting is the hard part, but I promise it will be delicious!
Ingredients:
-2 ripe bananas
-100g oats
-3 teaspoons cocoa
-2 tablespoons coconut oil
-5-6 biscuits
-50g nuts and raisins
Method:
1. Mash 2 bananas with a fork into a bowl and set aside until you crush the biscuits with your hands and cut the nuts and raisins into small pieces. You can also add them in a food processor, if you want to make it faster. But if you want it a little bit cruncy, don't over mix the dry ingredients. Also add the oats and cocoa to the mix.
2. When the mix is all combined, add it to the mashed bananas with 2 tablespoons of coconut oil (use butter if you dont have coconut oil) and mix all together. The composition should not turn into a paste, if so, add more oats or biscuits.
3. Cut one piece of plastic wrap/cling film, add the final mix, form a sausage, as thick as you want, and wrap it carefully into the cling film to form a “salami”.
4. Place the roll in the fridge for several hours or overnight. Before you cut it, you can toss it with some coconut flakes or cocoa powder. Enjoy !
