Indulge in This Guilt-Free Chocolate Cake with Protein Pudding Recipe!

An incredibly moist and tasty chocolate cake, filled with Lidl's renowned protein pudding and topped with mascarpone frosting, ideal for those new to baking!

What you need
For the cake
2 devil's food cake mix
240 g melted butter (or vegetable oil)
460 ml milk ( or water)
6 eggs
For the icing
500g mascarpone
250ml double cream
3 tbsp cocoa powder
200g (1 pot) protein pudding ( from lidl or aldi)
4 tbsp icing sugar
Extra topping
400g (2 pots) protein puddings ( from lidl or aldi)
What you do
1. First, you follow the instructions from the cake mix, which are quite simple: you beat 3 eggs and mix them with 120g melted butter or vegetable oil, 230 ml milk or water and the powder mix from the box. That will be for one batch, for the other one you just repeat the process and pour them in 2 grease cake tins ( or line base with baking parchment) and bake in the oven at 180°C for 23-28 mins or until a toothpick comes out with few crumbs.
* Bear in mind that if you do it with butter the consistency will be more dense and with vegetable oil will be more lighter. Either way I always find that the cake consistency is a little bit dry so I brush on a simple syrup ( water with sugar) or milk soak ( milk with vanilla extract or whatever flavour you like), I usually use about 1 cup.
2. Second, you do the icing, by using a handheld or stand mixer to whip the double cream until stiff peaks are formed. I use them straight from the fridge. Then you add the mascarpone with 4 tbsp of icing sugar ( it depend how sweet you prefer it) and 3 tbsp of cocoa. Mix everything until all combined, add 1 package of chocolate protein pudding (optional) and set aside.
3. At last, once the cakes are cool, remove from the tins and place the first layer of cake on a cake plate. Now use a spoon to scoop a little bit from the middle of the cake so you can add the simple syrup if the cake it's too dry, 1 cup of protein pudding and then add about 4 spoons of the icing to make an even layer. Place the second layer of cake on top, repeat the process and add the remaining icing on top and to frost the outside of the cake.
*If you want to make it even you will need to use a spatula or an icing smoother, but that is optional.
Now you can decorate it with your favourite fruits. I like it with strawberries, blueberries and raspberries. Once is finished, place it in the fridge for couple of hours. Cake is best when well covered for 3-4 days.
