Creamy Avocado Pasta!

This is absolutely delicious! Super easy, healthy, an amazing pasta dish and comes together in about 30 minutes! Isn't that amazing?!


First, choose the pasta you want, you can go with whole wheat pasta or the ones made from different vegetables, like: lentils, chickpea, beetroot pasta etc.


This pasta sauce, comes together in just a few minutes, you will need a blender or a food processor in which you will add all the ingredients for the sauce and blend them until smooth. So it's a brilliant meal, when you are trying to come up with something in the last minute.


What you need:

  • 200g pasta

  • 1 big avocado

  • 2 garlic cloves

  • 1 small handful of fresh basil

  • 1 handful of walnuts

  • 1/2 lemon or lime juice

  • 50g fresh spinach

  • 2 tbsp of pasta water

  • salt and pepper to taste

  • grated parmesan cheese on top


What you do:


1. After choosing your favourite type of pasta, cook the pasta according to the packet instructions ( about 10-15 minutes)

2. For the sauce you need a blender or a food processor in which you add the avocado, garlic cloves, basil, walnuts, lemon juice, spinach, salt and pepper and blend until smooth. If the sauce it’s too dry add 2 tablespoons of pasta water or greek yogurt. And if u want a creamy sauce, choose a ripe avocado.


3. When the sauce is ready, add it to the pasta and mix evenly, add some parmesan cheese or chilli flakes, if desired and enjoy!


Notes:

~ If you don't have walnuts, you can add other kind of nuts, like: pine nuts, pistachios or almonds!

~ You can also add sweet corn, cherry tomatoes or broccoli to this dish
