I strongly suggest opting for baby potatoes when making this dish to avoid the need for longer baking time. To ensure they are cooked thoroughly, I recommend checking their doneness by inserting a fork. The best part is that preparing them only takes a few minutes.

What you need
500g baby potatoes, yellow or red, washed and rinsed
4 tablespoons salted butter, melted
1 teaspoon garlic powder
salt and black pepper, to taste
1 tablespoon chopped parsley
2 tbsp Parmesan cheese, grated
Optional: paprika, oregano
What you do
1. Preheat the oven to 200°C. Line a small baking sheet with foil.
2. Rinse and scrub the potatoes throughly before using. Peel them if you want, I like them better as they are. Place each potato on a wooden spoon and cut horizontal slits on the potatoes.
3. In a small bowl, combine the butter, garlic or garlic powder, salt, black pepper, parsley and grated Parmesan, or what you like best, together. Toss the potatoes with the garlic butter mixture, you can also use a brush to add the garlic butter inside the slits of the potatoes.
4. Transfer the potatoes to the baking sheet. Roast the potatoes for 25 minutes, check if they need more butter, if not roast for another 20 minutes and check the potatoes by poking a fork into them to make sure they're cooked through. Remove from heat and serve immediately. You can sprinkle on top some parmesan or cheese of choice.
