Poached Eggs with Halloumi

Updated: Nov 11

My morning began with Poached Eggs on Halloumi.

It was incredibly tasty! Is there anything better than kicking off your day with a scrumptious and nutritious breakfast?! I also paired it with spinach, avocado, a splash of lime juice, cherry tomatoes, crispy rye bread, and various seasonings.

Since the main ingredient here are the eggs, I would like to say that eggs are incredibly nutritious. They are full of nutrients, such as: vitamin A, B2, B5, B6, B12, D, E, K, calcium, phosphorus, selenium and zinc. And only one egg has 6 grams of proteins and 5 grams of healthy fats.

What You need

~ 2 eggs

~1 tablespoon vinegar

~4 slices of halloumi

~a handful of spinach

~1/2 avocado

~few cherry tomatoes

~1/2 lime juice for avocado

~salt, pepper, oregano, chilly flakes

What you do

1. For the poached eggs you will need a saucepan, in which you add about 5 cm of water, one tablespoon of vinegar and some fresh eggs. Fresh eggs helps the white to stick to the yolk.

2. When the water starts boiling, turn the heat down, so the water is just simmering, you can stir the water around and then use a cup to slide the eggs, one by one, into the simmering water.

3. Leave the eggs in the simmering water for about 5 minutes, on low heat, or until the whites are set. You can take out the eggs from the pan with a spoon, set them on toast, fried halloumi or on what you prefer, add some spices, cut some vegetables next to them and enjoy!
