Taste as you go
Season in small stages and make the final adjustment just before serving, when all the flavours have come together.
A classic French-inspired salad that’s light, wholesome, and bursting with flavor\! Perfect for warm days or when you want something fresh but still filling. Enjoy it as a light lunch or a side dish for any meal\!
Step by step
Bring a pot of salted water to a boil. Add the halved potatoes and cook for about 10-12 minutes, or until tender.
In the last 3-4 minutes of cooking, add the green beans to the pot. Drain everything and rinse under cold water to stop the cooking process.
While the veggies cool, hard-boil the eggs, then peel and cut them into halves or quarters.
In a small bowl, whisk together all the vinaigrette ingredients until well combined.
To assemble the salad, combine the potatoes, green beans, olives, and chopped parsley in a large bowl. Drizzle the vinaigrette over and toss gently to coat.
Top with the hard-boiled eggs, extra parsley if desired, and enjoy\!
