There’s nothing cozier than a bowl of Autumn Glow Soup on a chilly autumn day. Roasted butternut squash, sweet potato, and carrot blended into creamy perfection, with cottage cheese stirred in for a little protein boost (and extra creaminess). Topped with crispy Parma ham, pumpkin seeds, and fresh thyme… this one feels like a hug in a bowl.
Step by step
Preheat oven to 200°C. Add squash, sweet potato, carrot, onion, garlic, and thyme to a baking tray. Drizzle with olive oil, season with salt, pepper, paprika, and garlic powder. Roast 30–40 minutes, until golden and tender.
(Optional) Cook Parma ham or bacon until crisp for topping.
In a large pot, melt the butter, then add roasted veggies and bone broth. Blend until smooth (immersion blender works great).
Stir in cottage cheese or cream, adjust thickness with water, and season to taste.
Serve warm with pumpkin seeds, thyme, and crispy ham or bacon, plus toasted bread on the side.
