Ingredients

  • 6 large eggs
  • 100g cooked chicken breast, diced
  • 50g baby spinach
  • 50g cherry tomatoes, halved
  • 30g cheddar cheese
  • Salt, pepper, and herbs

Method

    Preheat oven to 180°C. Grease a 6-hole muffin tin.

    Divide chicken, spinach, and tomatoes between holes.

    Whisk eggs with seasoning and pour over fillings.

    Top with cheese and bake 18–20 minutes until set.
