Ingredients
- 2 chicken breasts
- 1 courgette, sliced
- 1 red pepper, chopped
- 200g cherry tomatoes
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper
Method

Preheat oven to 200°C. Line a baking tray with foil.

Toss vegetables in olive oil and half the spices. Spread on tray.

Season chicken with remaining spices and place on top of vegetables.

Roast for 30–35 minutes until chicken is cooked through.
