Step by step
Preheat oven to 170°C. Place the pastry sheet on a sprayed pie baking tray. Poke holes with a fork at the bottom of the pastry and pre-bake for 10 minutes.
Meanwhile, in a large bowl, mix together the eggs, cottage cheese, chopped spinach, feta crumbles (if using), salt, and pepper.
When the pastry is ready, pour the egg mixture over the pastry and sprinkle some grated cheddar cheese over it.
Bake for another 25-30 minutes at 170°C, or until golden brown and set.
