Step by step
Prepare Meatballs: In a bowl, mix chicken mince with breadcrumbs, egg, soy sauce, parsley, spring onion, chili, salt, and pepper. Shape into small meatballs.
Cook Meatballs: Heat a pan with a little olive oil and cook the meatballs on all sides until golden. Remove and set aside.
Sauté Aromatics: In the same pan, sauté garlic & ginger paste, curry paste, and spring onion for a minute.
Simmer Sauce: Add coconut milk, chicken broth, sliced red pepper, soy sauce, honey, and lime juice. Stir and simmer for 5 minutes.
Combine: Return meatballs to the pan and simmer on low for 10–12 minutes until fully cooked through.
