A quick and flavorful one-pan meal, this teriyaki chicken fried rice is packed with tender chicken, fluffy rice, and colorful vegetables, all coated in a savory homemade teriyaki sauce. Perfect for a satisfying weeknight dinner.
Step by step
In a bowl, toss diced chicken breast with garlic salt and 2 tbsps corn starch. Set aside.
In another bowl, whisk together all ingredients for the chicken sauce until smooth.
Heat a large pan or wok over medium-high heat. Add a drizzle of oil and cook the chicken until golden brown and cooked through. Remove chicken and set aside.
In the same pan, add a little more oil and scramble the eggs. Remove and set aside.
Add frozen vegetables to the pan and stir-fry for 3-5 minutes until tender-crisp. Add cooked brown rice and stir-fry for another 2 minutes.
Return cooked chicken and scrambled eggs to the pan. Pour the prepared chicken sauce over everything and toss to coat evenly. Cook for 2-3 minutes until the sauce thickens.
Stir in 2 tbsps soy sauce and 1 tbsp sesame oil. Garnish with sesame seeds if desired.
