Taste as you go
Season in small stages and make the final adjustment just before serving, when all the flavours have come together.
Light, refreshing, and bursting with fresh flavors, these homemade spring rolls are a delightful and healthy meal. Filled with crisp vegetables and vermicelli noodles, they are perfectly complemented by a rich and savory peanut dipping sauce.

Step by step
Cook vermicelli noodles according to package instructions. Drain and rinse with cold water. Set aside.
Prepare all filling ingredients: julienne carrots and cucumber, thinly slice red cabbage, chop green onion and parsley.
For the peanut sauce, combine all sauce ingredients in a blender or food processor and blend until smooth. Adjust water for desired consistency.
Fill a shallow bowl or pan with warm water. Dip one rice paper wrapper into the water for 5-6 seconds until pliable. Lay it flat on a moist tea towel or wet wooden board.
Arrange a small amount of lettuce, noodles, green onions, parsley, and other vegetables in the center of the wrapper. Fold in the sides, then roll tightly from the bottom up.
Repeat with remaining ingredients. Serve immediately with the homemade peanut sauce.
