Keep it tender
Cook seafood only until it turns opaque and flakes easily; a little residual heat will finish it without drying it out.
Indulge in a rich and flavorful creamy prawn pasta, featuring succulent prawns and tender broccoli florets in a luscious cauliflower-based sauce. This dish is a delightful and healthy twist on a classic comfort food.
Step by step
Boil pasta in salted water according to package instructions until al dente. Reserve some pasta water and return pasta to the pot to keep warm.
Add cauliflower florets to boiling water and cook for about 20 minutes until tender.
Roast garlic cloves in an air fryer or oven at 200°C for 30 minutes until soft and golden brown.
To make the sauce, blend cooked cauliflower, full-fat coconut milk, roasted garlic (without skin), salt, pepper, and paprika until smooth.
Marinate prawns with chilli flakes, minced garlic, and ½ lemon juice, and salt.
In a pan, sauté broccoli florets with 1 tsp ghee butter until tender. Add marinated prawns and cook until heated through. Pour the cauliflower sauce over and mix.
Serve pasta in bowls, topped with the creamy prawn sauce and garnished with fresh parsley.
