Step by step
Preheat the oven to 200°C (390°F). Toss diced potatoes with avocado oil and season with salt, pepper, paprika, garlic powder, and oregano. Spread on a lined baking tray and bake for 10 minutes.
After 10 minutes, place the salmon fillets on a separate tray, season the same way, and pop them into the oven. Bake both the potatoes and salmon for another 12–15 minutes, or until cooked through.
Meanwhile, boil or steam the green beans for about 4–5 minutes until just tender but still vibrant.
Make the Yogurt Dressing: In a small bowl, mix together the Greek yogurt, minced garlic, chopped capers, Dijon mustard, lemon juice, salt, and pepper. Stir until creamy.
Assemble: Serve the baked salmon with a side of golden potatoes and green beans. Drizzle or spoon the yogurt dressing on top or on the side, and finish with a squeeze of fresh lemon juice.
