Step by step
Make the Marinade: In a bowl, mix all the sauce ingredients together. Season with salt and pepper.
Marinate Salmon: Remove skin from salmon fillets, rinse, and pat dry. Marinate in the prepared sauce for at least 1 hour in the refrigerator.
Cook Rice and Veggies: Cook brown rice according to package instructions. Four minutes before the rice is cooked, add the green beans. Next, add the sweetcorn and mix well. Drain any excess water.
Bake Salmon: Preheat oven to 200°C (or use an air fryer). Place the marinated salmon fillets in an oven-safe dish, reserving the remaining marinade. Bake for 8-10 minutes. Three minutes before the end of baking, sprinkle with sesame seeds.
Thicken Sauce: Transfer the reserved marinade into a small saucepan and heat until it thickens. Stir in the sesame oil and remove from heat.
Serve: Divide the rice and salmon between plates, then drizzle with the thickened teriyaki sauce.
