Step by step
Preheat oven to 200°C. Toss cubed potatoes with a drizzle of olive oil, salt, and pepper. Roast for 20-25 minutes until golden and tender.
While potatoes roast, season the sirloin steak generously with salt and pepper. Heat ghee butter in a pan over medium-high heat. Sear the steak for 3-4 minutes per side for medium-rare, or longer for desired doneness. Let rest for 5 minutes before slicing.
In the last 10 minutes of potato roasting, add the asparagus to the oven and roast until tender-crisp.
In the same pan used for steak, add a little more ghee and minced garlic. Sauté for 1 minute. Add sliced steak and toss to coat.
Serve the sliced steak with roasted potatoes and asparagus, garnished with fresh parsley.
