Step by step
Prepare the Sweet Potatoes: Cube the sweet potatoes, toss with olive oil, salt, pepper, and your favorite seasoning. Roast in the oven at 200°C for about 20–25 minutes, until golden and tender.
Cook the Beef: In a pan, cook the minced beef with taco seasoning. Add tomato paste and a splash of water, stir well. Drizzle with a little Nando’s garlic sauce for extra flavor. Cook until browned and fully cooked.
Mix the Beans & Corn: In a small bowl, combine red kidney beans, sweet corn, a drizzle of olive oil, and a pinch of salt and pepper.
Make the Salsa: Dice the tomato, half of the red onion, and chop fresh parsley. Toss together with lemon juice, salt, and pepper.
Assemble the Bowl: Start with a handful of leafy greens as your base. Top with roasted sweet potatoes, seasoned minced beef, bean & corn mix, fresh salsa, shredded cheddar, and sliced avocado. Garnish with extra parsley if desired.
