A light and flavorful Mediterranean-inspired baked fish dish, featuring tender cod fillets marinated with herbs and lemon, baked alongside colorful vegetables. This wholesome meal is quick to prepare and bursting with fresh flavors.
Step by step
Preheat the oven to 200°C.
In a bowl, combine minced garlic, rosemary, thyme, oregano, parsley, ½ lemon juice, salt, pepper, and 2 tbsp olive oil. Mix well.
Rub the marinade generously on both sides of the fish fillets. Set aside.
Add diced zucchini, cherry tomatoes, and pitted olives to the remaining marinade and mix until well coated.
Pour the marinated vegetables into a baking dish. Place the marinated fish on top of the vegetables.
Bake in the middle rack of the oven at 200°C for 15-20 minutes, or until the fish is cooked through and flakes easily.
Remove from the oven and let it rest for about 5 minutes. Serve with cooked quinoa.
