    On a large baking tray, spread out the diced sweet potato, courgette, onion, cherry tomatoes, and chicken. Drizzle with olive oil, season with salt, pepper, and herbs. Toss to combine. Bake for 20-25 minutes, until vegetables are tender and chicken is cooked through.

    Remove the tray from the oven. Add the gnocchi and tomato passata, tossing gently to combine with the roasted chicken and vegetables. Sprinkle the grated cheese evenly over everything.

    Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly, and the gnocchi is tender.
