Spray lightly with avocado oil and bake at 200°C for 15-20 minutes, turning halfway, until cooked through.

  2. 02

Prepare Couscous: Prepare couscous according to package instructions. Fluff with a fork and set aside.

  3. 03

Prepare Tzatziki: In a bowl, combine Greek yogurt, grated & drained cucumber, minced garlic, lemon juice, chives or dill, and salt. Chill in the fridge.

  4. 04

Assemble Bowls: Divide couscous into bowls. Top with meatballs, cherry tomatoes, diced cucumber, thinly sliced red onion, and olives. Garnish with fresh chives and serve with a generous dollop of tzatziki.

Gabriela's tips

Small changes that make this recipe easier to fit into real life.

01

Keep it juicy

Cook the chicken or turkey until just done, then let it rest briefly before slicing so the juices stay in the meat.

02

Make the grain ahead

Cook the rice, quinoa or couscous in advance and chill it promptly to make assembly faster on a busy day.

03

Useful for tomorrow

Cool leftovers promptly and refrigerate in a sealed container; add a splash of water when reheating to bring the texture back.
