Step by step
Prepare Meatballs: In a large bowl, mix turkey mince, egg, panko breadcrumbs, minced garlic, parsley, salt, pepper, and oregano. Roll into small meatballs and place on a lined baking tray. Spray lightly with avocado oil and bake at 200°C for 15-20 minutes, turning halfway, until cooked through.
Prepare Couscous: Prepare couscous according to package instructions. Fluff with a fork and set aside.
Prepare Tzatziki: In a bowl, combine Greek yogurt, grated & drained cucumber, minced garlic, lemon juice, chives or dill, and salt. Chill in the fridge.
Assemble Bowls: Divide couscous into bowls. Top with meatballs, cherry tomatoes, diced cucumber, thinly sliced red onion, and olives. Garnish with fresh chives and serve with a generous dollop of tzatziki.
